Driven by our desire to always offer the best to our distinguished clients and guests, we created with traditional stonework in the underground spaces of the Hatzi Mansion, a cellar where the ideal conditions of aging prevail.

There we keep selected organic products, olive oil, wine and cheese varieties from the Greek tradition.

The constant temperature and humidity control, as well as the space ventilation study, ensure the absolute quality of the products we use in the preparation of our delicious dishes under the watchful eye of the owners of the Mansion and always in collaboration with outstanding and award-winning Executive Chefs.

The gathering of the olives, the grape harvest, the drying of the aromatic plants of the estate, the precious traditional cheeses, the preservation of the biological extra virgin olive oil find their own storage space in the cellar of Hatzi Mansion.
